How the counter works

Baked out back, or grown a few miles out.

Flour-dusted hands cutting biscuit dough on a wooden benchThe kitchen

Everything on the board is made in the kitchen out back or grown within a few miles of the porch. Biscuits go in first, before the light is any good, and they go fast — we cut them thick and bake them a pan at a time through the morning.

The stand side runs on what's ready. Field peas and tomatoes in the summer, greens when it cools off, pecans when the leaves turn. If something isn't in, it isn't in — we'd rather the shelf be honest than full.
